Butternut Soup with Bread Serves 4 Ingredients 1 tbsp olive oil 500g butternut squash, peeled and chopped 1 onion, peeled and chopped 2 cups vegetable stock 400g canned chickpeas, drained and rinsed 1 2/3 cups reduced-fat coconut milk Sliced bread, to serve Method Heat the olive oil in a large pan and sauté the onion until soft. Add the chopped butternut squash and chickpeas, and cook for 5 minutes. Pour in the vegetable stock and bring to the boil. Simmer for 15–20 minutes until the butternut is tender. Blend the soup until smooth, then stir in the coconut milk and heat gently through. Serve with slices of bread. Pasta with Jamie Oliver’s 7 Veg Sauce Serves 4 Jamie Oliver’s 7 Veg Sauce is a brilliant, budget-friendly staple for family meals. It’s packed with seven different vegetables – including carrots, peppers, courgettes, and tomatoes – making it an easy way to boost your family’s daily veg intake. Mix the pasta into the sauce and serve. Pizza Baked Potato Serves 4 Ingredients 4 baking potatoes 1 tbsp olive oil ½ red onion, finely chopped 1 garlic clove, crushed 1 red pepper, chopped 1 tin chopped tomatoes 1 handful fresh basil leaves, torn 100g grated mozzarella Salt and pepper, to taste Method Heat your oven to 200 °C / 180 °C fan / gas 6. Scrub the potatoes, dry them, then prick several times with a fork. Bake directly on the oven shelf for 1 to 1½ hours until they feel soft. While the potatoes are baking, warm the olive oil in a pan and sauté the onion for about 5 minutes until softened. Add the garlic and red pepper, cooking for another 1–2 minutes. Stir in the chopped tomatoes and half the basil. Bring to the boil, then reduce heat and simmer for about 5 minutes. Season with salt, pepper, and the rest of the basil. Once the potatoes are cooked, split them open and spoon over the sauce. Top each potato with grated mozzarella. Return to the oven briefly if needed to melt the cheese. Serve while hot.
